The Secret to Making Chicken Wings Perfectly Crispy and Beautifully Fried

One of the most common problems in the kitchen is that chicken wings arranged on a baking sheet often remain soft or their skin doesn't brown enough. Preparing beautifully browned and crispy chicken wings without deep-frying isn't as difficult or complicated as it might seem.

The most important rule for determining crispness when baking chicken wings in the oven is that the chicken surface must be completely dry. Moisture remaining on the chicken wings after removing them from the package will evaporate during baking, causing the skin to soften. This results in a boiled-like texture instead of a crispy texture. Before starting, each chicken wing should be thoroughly dried with paper towels using dabbing motions. Leaving not a single drop of moisture on the skin is the first golden rule for achieving a crispy outer crust.

The real secret to giving chicken wings that famous crispy, fried texture is aluminum-free baking powder mixed with salt. The biggest mistake here is using baking soda instead of baking powder; baking soda leaves a bitter taste in the chicken, while baking powder changes the pH level of the skin, providing crispness. Baking powder and salt are thoroughly mixed in a deep bowl with dry spices to your taste. This powder mixture triggers the breakdown of proteins in the chicken skin and creates bubbles on the surface during cooking, resulting in crispness. The right choice and proportions of ingredients ensure that the chicken wings never have a doughy taste when cooked.

The dried chicken wings are thoroughly coated in the prepared dry mixture with baking soda, and any excess is gently shaken off. To prevent the wings from cooking in their own juices in the oven, they should be placed on a wire rack placed on top of the baking tray, not directly on the tray. Using a wire rack allows hot air to reach the underside of the wings evenly, and allows the fat to drain down. Lining the bottom of the tray with parchment paper prevents dripping fat from burning and makes cleaning easier. This arrangement ensures that both sides of the chicken wings become evenly crispy.

For crispy chicken wings, using two heat control settings during cooking yields the best results. In the first stage, cooking at a lower oven temperature allows the fat inside the wings to slowly melt and drip out from the skin. Then, the oven temperature is increased to ensure the skin turns a golden brown and becomes crispy with bubbles. You can immediately toss the hot wings with your favorite sauces or serve the sauce separately. Wings cooked using this method retain their delicious crispness for a long time, even after being topped with sauce.
