Greek Lentil Salad

There are salad recipes suitable for every meal, every occasion, and every season. Today, salads are prepared with any vegetables, meat, poultry, fish, pasta, grains, legumes, salad greens, and fruits.

  • Green lentils
  • Red lentils
  • Pitted olives
  • Capers
  • Garlic
  • Parsley
  • Thyme (oregano)
  • Lemon juice
  • Olive oil
  • Ground black pepper
  • Salt
Method · 30 min
  1. Rinse the green and red lentils separately and boil each in its own saucepan in salted water until tender. Drain the cooked lentils in a sieve, pat dry, and then blend.
  2. Squeeze the juice of half a lemon into a cup and season with black pepper. Don't add salt, as all the salad ingredients already contain it. Mix the lemon juice with olive oil. Drizzle the dressing over the salad and refrigerate for half an hour before serving.

Greek salad is served in every taverna in this country. Incidentally, here, in its homeland, the dish is often called "horiatiki salata," which simply means "village salad." That is, it doesn't claim to be particularly sophisticated. And who needs it, when the dish combines ripe Greek vegetables, nourished by the hot southern sun, spicy herbs, fragrant olive oil, and the freshest feta cheese?! Ultimately, it's not the sophisticated preparation method or the special sauce that makes the difference, but the quality of the ingredients themselves. The rest is a matter of technique: quickly chopping the ingredients and tossing them with oil. Greeks themselves often place the feta cheese whole on top of the salad. Whether you slice it yourself or crumble it with a fork, the Greek salad is still delicious!

Our Greek Caesar is a fantastic mashup of two famous salads. Even if this idea seems dubious, give it a try, at least as an experiment. The ingredients alone are worth considering! The salad borrows shrimp, croutons, and crispy romaine lettuce from the Caesar salad, while the Greek salad incorporates cucumbers, feta, and olives. As for the dressing, it's completely unique: with anchovies, garlic, Dijon mustard, and Worcestershire sauce. It's a real treat! Incidentally, this Greek Caesar will be a hit at any holiday table, especially if your friends and family consider themselves true gourmets.

A Greek salad with Chinese cabbage is perfectly acceptable, especially since many English-speaking countries confidently add lettuce, frillice, or romaine lettuce to this dish. It doesn't significantly affect the dish's flavor, but it does improve the texture, adding even more crunch. Otherwise, this Greek salad adheres to the same canons: the same fresh cucumbers, tomatoes, red onion, olives, and feta. Just remember that in the dish's homeland, all ingredients are chopped very coarsely to allow the flavors to meld without mixing, so over-chopping the vegetables is definitely not recommended.

This Greek salad with avocado recipe is a twist on the classic, and a very successful one at that. Firstly, this unsweetened fruit makes the dish even healthier. Secondly, it's more filling. And thirdly, it simply offers a different, and very enjoyable, gastronomic experience. The main ingredients are quite traditional: cucumbers, tomatoes, bell peppers, onions, lettuce, and olives. And there's no need to fuss with the dressing for this Greek salad with avocado! Just use olive oil, add a little balsamic vinegar, whisk gently, and you're ready to go.
