Banana split with sour cherry
For the banana bread, mix the dry ingredients (flour, baking powder, vanilla bean paste) in a mixing bowl. In another bowl, beat the egg, mix in the mashed banana and butter, and mix well. Gradually add half of the milk, then the flour mixture, and finally the other half of the milk, and mix until smooth.
Fry the mixture in a non-stick frying pan or pancake pan over medium heat: using a ladle, spoon approx. 100 ml of the mixture into the centre of the pan and let it spread. 1 side needs 2-3 minutes to cook, then flip and fry the other side. Be careful, if you fry it over a higher heat it will burn and the centre may remain raw!
While the pancakes are baking, put the cherries in a pot, add about 100 ml of water and bring to the boil. When it boils, sprinkle in the cinnamon and puree the whole thing. Adjust to the appropriate temperature (warm/lukewarm, maybe cold when cooled, but definitely not hot!).
We add the cherry sauce to the cooked pancakes so that the child can nibble on the bites. For smaller babies, it is worth cutting the pancakes into oblong pieces before serving.
TIP: Banana puree works best if the banana you are working with is overripe. It is sweet and easy for your baby to digest. This is the banana that has brown spots and is starting to turn brown, and looks overripe. If you didn't buy one like that, it's okay, just bring it home when it's yellow and it will ripen in a few days at room temperature.
Don't be afraid of milk, according to current infant nutrition recommendations, it can be given in this amount before the age of 1 for food preparation - it provides the baby with well-absorbed calcium and quality protein. For babies with milk protein allergies, cow's milk can be replaced with plant-based drinks, but in the case of such a problem, carefully investigate how long the diet is needed and whether it is needed at all, since the recommendations have changed a lot. We need to replace the missing nutrients, in this case a dietitian will help, and among plant-based drinks, we should use a calcium-enriched version for baby food. (Experts do not recommend rice milk for children under 5 years of age, due to its presumably high arsenic content.)
