Easy Carrot Omelette - Pilar Hernández's Chilean Kitchen

It had been years since I'd had a carrot omelet; it's such a classic in Chile, but it's not popular here and I'd forgotten all about it. At home they used to make it with just a few eggs and parsley in the batter; I made it very simple and sprinkled it with chives before serving.

Ingredients · Servings 4
  • 1 onion (or 1/2) diced into small cubes
  • 4 medium carrots, washed, peeled and grated
  • 2 eggs
  • 2 tablespoons of cream or whole milk
  • 2 tablespoons of vegetable oil
  • salt and pepper to taste
  • chopped parsley or chives

  1. Heat 1 tablespoon of oil in a medium non-stick frying pan over medium-high heat, add the chopped onion and let it brown for 5-8 minutes until it is starting to change color.
  2. Combine the onion and grated carrot in a bowl and stir, mixing well.
  3. In a small bowl, mix the eggs with the cream, parsley if desired, salt and pepper, beat for 2 minutes with a fork until frothy.
  4. In the same pan used for the onions (you can wipe it clean with a paper towel off the heat), heat 1 tablespoon of oil over medium heat. Add the carrot and onion mixture and press it down firmly to evenly coat the pan. Immediately add the egg mixture and let it drain. Cook the tortilla over medium heat for about 15 minutes, stirring occasionally to prevent sticking. When the center is cooked (no longer moist), flip the tortilla; I use a plate to do this and let it brown on the other side for another 3 minutes.
  5. Serve hot or at room temperature, sprinkled with chives if desired.
  6. If you don't want to flip the tortilla, you can use the oven's broiler to brown the top; it turns out just as well. That's what I do at home.

I first posted this recipe back in 2010. It's amazing how time flies. I still love tortillas and I'm always making them with different vegetables, depending on what's cheap or what I've harvested each week.
