Fried green beans - Pilar Hernández's Chilean Kitchen
Okay, I confess that in these 10 years in the US I had never made vegetable fritters... how awful! It's such a classic thing in Chile, the problem is that my favorites are cauliflower fritters and my husband hates them, so I erased the idea from my mind.

- 800 grams of green beans
- 2 eggs
- 1/2 cup all-purpose or whole wheat flour
- 1/2 cup of shredded cheese (optional)
- oil, salt and pepper

- Wash and drain the beans. Trim the ends and slice lengthwise. Meanwhile, bring salted water to a boil in a pot. Once boiling, add the beans and cook for 3 minutes, until tender-crisp. Drain and place in a bowl of ice water to set the color and stop the cooking process. Let sit for 5 minutes, then drain again.
- In a bowl, combine the drained and cooked beans, flour, eggs, cheese (if using), chopped scallions, salt, and pepper. Stir with a fork or your hands until well mixed.
- Heat a large non-stick frying pan over high heat; if you sprinkle water on it, it should dance and evaporate almost immediately. Reduce the heat to medium. Add 1 tablespoon of olive oil, and place a generous spoonful of the green bean mixture in the pan, gently flattening it to form fritters and cook for 5 minutes. Turn over and cook for another 5 minutes.
- Remove to a plate covered with a paper towel and continue with the rest of the mixture.
- Serve hot or at room temperature.
They're back now, and hopefully here to stay—these were delicious. As you can see, it's a pretty simple version of green bean fritters. You can add chopped scallions and substitute all-purpose flour for the whole wheat flour. How do you make them at home?
