One sheet, five lunch boxes - the smartest way to make lunch boxes!
Prepare the chicken in a sponge cake tin! An easy way to get an extra juicy chicken that is enough for three lunch boxes. The lunch boxes can be varied according to your taste and preference, but here are tips for three of my favorites!

Short on time? Make a sheet of ratatouille, divide into five lunch boxes and vary the side dishes – easy and delicious all week long! Here is the basic recipe and my best tips for side dishes – pick and choose for a really smooth and delicious week!
Step 1 - make a plate of ratatouille
Ratatouille is the perfect base for flavorful and nutritious lunch boxes, and when you cook it on a baking sheet, the dish almost takes care of itself. Easy, right? Here's the recipe:

Step 2 - the food boxes
Once the ratatouille is ready, all you have to do is build the lunch boxes! Below you will find simple accessories that will enhance the flavor. Choose one favorite for the whole week or mix several. You decide!
- 1. Pasta Cook 1 portion of pasta and mix with 1/5 of the vegetables. Top with stratciatella, mozzarella or parmesan.
- 2. Black lentils and salsiccia Cook 1 cup of black lentils (or use pre-cooked ones) season with olive oil, parsley, lemon and salt. Fry a salsiccia sausage or other. Serve with 1/5 of the vegetables and yoghurt seasoned with salt.
- 3. White beans & spinach Mix 1/5 of the vegetable mixture with 1 dl white beans and a handful of spinach. Sprinkle with crumbled feta cheese and serve with a salad.
- 4. Bulgur and halloumi Boil a portion of bulgur, fry halloumi or grilled cheese. Serve with 1/5 of the vegetable mixture and yogurt seasoned with harissa and salt.
- 5. Shakshuka Season 1/5 of the vegetables with 1 tsp harissa, cumin and chili flakes. Before heating, make two wells in the vegetable mixture and crack in two eggs. Microwave with lid on for about 4 minutes and let stand for another two minutes. Serve with zaatar and bread.
