Limoncello Express Mimosa: the single-serving dessert ready in a flash!

Looking for a last-minute dessert but don't want to sacrifice elegance? The Mimosa Express Limoncello Cake is the perfect solution for those short on time but looking to impress. By using ready-made sponge cake, we cut down on preparation time and focus on a silky, fragrant custard.

  • Sponge cake about 400 g
  • Egg yolk 4
  • Sugar 100 g
  • Corn starch 40 g
  • Latte 500 ml
  • 1 pinch of fine salt
  • Vanilla
  • Limoncello
Method · 35 min
  1. Start by preparing the custard base: in a saucepan, combine the egg yolks, cornstarch, sugar, vanilla, and a pinch of salt. Mix the ingredients well and slowly pour in the milk, a little at a time. Continue stirring carefully to incorporate the liquids and avoid lumps before turning on the heat.
  2. Place the pot on the stove and, stirring constantly, bring to a boil. The cream is ready when it has visibly thickened to a velvety consistency. Immediately transfer the cream to a plate and cover it with plastic wrap. This small precaution is essential to prevent a skin from forming on the surface as it cools.
  3. Take the prepared sponge cake and cut it into slices. Carefully remove the dark outer layer (edges and surface): for an elegant result, we need to use only the soft, yellow center of the cake. Cut some of the slices into small cubes and roughly crumble the rest with your hands. This mix of different shapes will create the final "mimosa" effect, making your cake beautiful and spectacular.
  4. Start by sprinkling a few sponge cake crumbs on the bottom of each glass. Drizzle them evenly with limoncello (or milk for a non-alcoholic version). Add a layer of chilled pastry cream, top with more sponge cake cubes, drizzle with more limoncello, and spread a second generous layer of cream, smoothing it out evenly.
  5. Complete the glass by covering the entire surface with the remaining crumbled sponge cake, trying to recreate the classic soft effect of the mimosa flower. Refrigerate the glasses for at least two hours before serving. This resting time is essential for allowing the syrup to flavor the sponge cake and for the cream to set perfectly.
