Mac and cheese with cheese curds

This comforting, reimagined dish features mac and cheese with cheese curds, an even more indulgent version of the classic. Smother the macaroni in a creamy sauce made with milk and melted yellow cheddar. Add diced ham for a salty and satisfying touch. Insert a bag of cheese curds for a different texture. For a family dinner filled with warmth, nostalgia, and enjoyment, this combination is a winner.

Also plan for:

45 ml (3 tbsp) of butter

45 ml (3 tbsp) all-purpose flour

Optional:

2 finely chopped green onions

Steps

Cook the pasta al dente in a saucepan of boiling salted water. Drain.

In the same saucepan, melt the butter over medium heat. Add the flour and cook for 1 minute, stirring constantly.

Gradually pour in the milk while whisking. Bring to a boil, stirring with a wooden spoon, then simmer for 2 to 3 minutes, stirring occasionally.

Add the cheddar and stir until melted.

Return the pasta to the pot and add the ham. Season with salt and pepper and stir.

Transfer the mixture to a baking dish. Top with cheese curds.

Set the oven to the "broil" position and cook for 2 to 3 minutes, until the cheese is golden brown.

If desired, sprinkle with green onions when serving.
