Imagine the scent of butter churning in the oven as a crispy crust puffs up, embracing the sweet, slightly tart juices of berries. Making these quick blackberry and blueberry puff pastries is the perfect magic to transform an ordinary afternoon into a special moment.

Method · 30 min
  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper. Gently rinse the blackberries and blueberries under cold running water. Dry them thoroughly by patting them dry with paper towels: removing any moisture is essential for a crispy crust. Unroll the puff pastry directly on the work surface, keeping the protective paper on, and cut out 4 equal rectangles using a pastry cutter. Using the tip of a sharp knife, lightly score the perimeter of each rectangle about 1 cm from the edge, being careful not to cut the blade into the pastry. This simple trick will allow the crust to puff up perfectly during baking.
  2. Gently prick the center of each rectangle with the prongs of a fork: this step is essential to prevent the pastry from puffing up in the center during baking. Arrange the blackberries and blueberries in the center of each rectangle, distributing them evenly and staying well within the scored edge. Finally, sprinkle the fruit with brown sugar for a light and delicious caramelization in the oven.
  3. Whisk the egg yolk with a splash of water in a small bowl and generously brush the edges of the puff pastry. Bake the pan for about 15-18 minutes, until the edges are puffed, golden, and crispy. Remove the puff pastry from the oven and let it cool on a wire rack. Before serving, dust generously with powdered sugar and garnish with a few fresh mint leaves.
