- 焼き芋は皮をむく。ボウルに入れてなめらかになるまでつぶす。
- 別のボウルに白玉粉を入れてつぶす。1の焼き芋、水を少しずつ加えながら耳たぶくらいの固さにまとめて10等分に丸める(生地)。
- 生地を直径6cmほど広げ、中心にこしあん(1/10量)のせる。俵形に整えながら包む。同様に計10個作る(団子)。
- 鍋にたっぷりの湯をわかし、団子を入れる。浮き上がってきたら、さらに中火で3分ゆでて取り出す。冷水にさらす。
- 団子は5分ほどおき、表面を乾かす。食紅は水(分量外:適量)で濃いめに溶かし、つまようじの先端で目を描く。純ココアをお湯(分量外:適量)で溶き、同様に耳を描く。
