Salmon bowl with mango salad

Salmon bowl with mango salad is simple and very good! Dishes served from bowls or all-in-one bowls are very popular, and most go under the common name "bowls". What you fill the bowl with can be varied in the same way as all other dishes, but this one contains bulgur, oven-baked salmon and mango salad.

Ingredients · Servings 4
  • 4 dl bulgurgryn
  • 600 g salmon fillet
  • 4 tablespoons olive oil
  • 0.5 pcs lemon
  • 1 red chili pepper
  • 1 piece mango
  • 1 piece avocado
  • 1 red onion
  • 1 piece of lime
  • coriander
  • olive oil
  • salt and ground pepper
  • soy sauce
Method · 30 min
  1. Cook the bulgur as directed on the package. Preheat the oven to 180 degrees.
  2. Divide the salmon into four even pieces and place them in a greased ovenproof dish. Season with salt and ground pepper, and drizzle with a little oil.
  3. Mix 4 tablespoons of olive oil and lemon juice with the cooked bulgur and season with salt and pepper.
  4. Peel and cut the mango and avocado into even pieces. Finely chop the red onion and chili. Mix together the mango, avocado, red onion, chili, lime juice and coriander.
  5. Bake the salmon in the middle of the oven for about 8 minutes. It should still have a pink core.
  6. Divide the bulgur and mango salad into four bowls. Top with salmon, preferably cut into coarse pieces.
  7. Drizzle over some soy or teriyaki sauce and serve.
