'Killer' spaghetti: the Italian dish that drove the internet crazy

"Spaghetti all'assassina" is a traditional specialty from the Italian city of Bari in Puglia, which has become a real internet hit in recent years and has won over pasta lovers all over the world.

Why did spaghetti get such a "killer" name?

The name literally means "killer spaghetti." One of the most popular explanations is that the dish got its name because of its intense spiciness, as the traditional recipe contains a lot of chili.

Another explanation is that the name is related to the preparation technique: the pasta is almost "killerly" browned during cooking, giving it a distinctly caramelized, crispy crust. It is this crispy browning that is the hallmark of this dish.

Pasta cooked like risotto

As mentioned above, the biggest specialty of the dish is the preparation technique.

The spaghetti is placed raw directly into a pan with olive oil, garlic, tomato sauce and chili. Then a hot base made from a combination of water and tomato concentrate is gradually added, similar to making risotto.

As the liquid evaporates, the pasta will start to stick to the bottom of the pan. And that's exactly the goal.

Chefs emphasize that the spaghetti should be almost burnt in certain places, as it is this slightly burnt taste that creates the dish's characteristic depth. The pasta is then turned in the pan, and the process of adding liquid is repeated until the pasta is soft, spicy, and crunchy at the same time.

A dish almost forgotten for many years

Although "killer spaghetti" is now a viral hit on TikTok and Instagram, the dish was primarily a local specialty of Bari for decades.

According to Italian gastronomic media, the recipe was supposedly created in the 1960s in a restaurant in Bari, where the chef accidentally left the pasta on the stove for too long. Instead of throwing it away, he served it to his guests, and a new culinary classic was born.

Why are people obsessed with them?

The dish's success is based on the contrast of textures, such as the soft center of the pasta and the crispy edges, complemented by the strong flavors of the tomatoes and chilies and the smoky note of the baked part. It's something completely different from classic Italian pasta, which usually avoids overdone flavors.

That's why many chefs describe "spaghetti all'assassina" as one of the most daring Italian pasta dishes.
