Tiramisu-flavored Christmas log without a mold: an easy and elegant dessert to surprise

  • 45 ladyfinger biscuits (or vanilla sponges, like savoiardi biscuits, the kind used in tiramisu)
  • 300 ml of dessert cream (minimum 30% fat content. Very cold. Heavy cream)
  • 250g of mascarpone (cold)
  • 30g of icing sugar
  • 1 teaspoon of vanilla essence
  • 100 ml of coffee
  • 3 teaspoons of unsweetened pure cocoa (approx.)
  • 1 teaspoon of unsweetened cocoa powder (approx.)
  • 1 teaspoon of icing sugar (approx.)
  • Coffee beans (optional)
Method · 6 h 20 min
  1. Before you begin, chill the cream, mascarpone, bowl, and beaters in the freezer for 15 minutes: this will ensure the cream whips perfectly. Once chilled, place the cream in a tall bowl, add the mascarpone, powdered sugar, and vanilla, and beat until you obtain a firm and airy cream.
  2. Dip the ladyfinger biscuits in the coffee. If you want them to melt in your mouth, submerge them completely; if you prefer them to retain some texture, dip them only halfway.
  3. Lay a sheet of cling film on the work surface and arrange the soaked sponges side by side, forming three rows of ten, with the sugared side facing up. Make sure there is excess cling film on all sides so you can later shape your Yule log.
  4. Place the cream in a piping bag and spread it only down the center of the sponge cake, forming a lengthwise strip. You can also spread the cream by hand.
  5. Sprinkle a thin layer of unsweetened pure cocoa over the cream.
  6. Place another row of soaked biscuits right on top of the center.
  7. Cover with another layer of cream, cocoa, and add a new layer of soaked sponges, this time cut in half.
  8. Spread the remaining cream over the entire surface, including the sides, and sprinkle with a little cocoa (preferably sifted through a sieve).
  9. Next, bring the side rows of sponge cakes towards the center to form the "chalet." Press down gently and wrap the log in plastic wrap. Place the log on a tray and refrigerate for at least 6 hours to firm up.
  10. Carefully remove the film. Sprinkle unsweetened cocoa powder over the entire surface and add a light dusting of powdered sugar to create a snowy effect. If desired, decorate with a few coffee beans.
  11. This log is very easy to cut into individual portions: each sponge cake is equivalent to one slice! And that's it! Happy holidays!

How is it possible to make a Yule log without a mold?

How long can the log remain in perfect condition?

Under proper refrigeration (between 3 and 5 °C), it keeps perfectly for 2 or 3 days. After that time, the sponge cakes may soften and the cream may lose some of its airiness. Avoid freezing it: mascarpone does not thaw well and its texture changes.

Can I add liquor to coffee to intensify the flavor?
