The trick to super-crunchy chocolate yogurt and fig bites

Imagine the perfect contrast between a dark, crunchy shell that cracks at the first bite and a creamy, chilled center of fresh fruit. These chocolate-coated fig and yogurt bites are the perfect solution for late-summer afternoons, when you're craving something sweet but want something light.

  • 6 medium-sized, ripe fresh figs
  • Greek yogurt 150 gr
  • Honey or maple syrup 1 teaspoon
  • 70% dark chocolate 150g
  • Coconut oil 1 teaspoon
  • Pistachio grains or hazelnut grains
  • Flaked salt
Method · 20 min
  1. Gently wash the fresh figs, dry them thoroughly, and dice them into small cubes, keeping the peel on to preserve their structure. Pour the Greek yogurt into the bowl, add honey if you prefer a sweeter flavor, and mix thoroughly until smooth.
  2. Add the diced figs to the yogurt and gently mix, distributing the fruit evenly throughout the mixture. Line a tray with parchment paper and, using a spoon, form discs of the mixture, well-spaced apart.
  3. Transfer the tray to the freezer for about 2 hours, until the morsels are completely frozen. Break the dark chocolate into pieces and melt it in a double boiler or in the microwave in short bursts; add the coconut oil and stir until the glaze is smooth and glossy.
  4. Remove the bites from the freezer and, one at a time, dip them in the melted chocolate using a fork to completely coat them. Immediately place the bites on the parchment paper and garnish the top with chopped pistachios and a pinch of flaky salt before the coating hardens. Freeze for another 10 minutes to let the chocolate set, then serve and enjoy them immediately, chilled!
