Homemade waffles

Method of preparation

In a deep bowl, break the eggs and beat well with a wire whisk or mixer until the mixture is smooth and slightly fluffy. Add the sugar and a pinch of salt, then mix again until the sugar begins to dissolve.

Gradually pour the milk into the egg mixture, stirring constantly. Then add the melted and slightly cooled butter. Stir gently so that all the liquid ingredients are well mixed.

In a separate bowl, sift the flour, baking powder, and vanilla. Sifting helps the dough become fluffier and prevents lumps from forming.

The dry ingredients are gradually added to the liquid mixture, stirring constantly. The goal is to obtain a smooth batter with a consistency similar to that of a cake or thick pancakes. If small lumps appear, the mixture is beaten a little more until it is completely homogeneous.

Preheat the waffle iron well. If the appliance is not non-stick, the plates can be lightly greased with oil or fat.

Pour a little of the mixture into the center of the heated pan. Close the waffle maker and bake the waffles for a few minutes until golden and slightly crispy on the outside. Do not open the appliance too early to avoid tearing the waffles.

The finished homemade waffles are carefully removed and left briefly on a wire rack to retain their slight crispiness. They are served warm with jam, honey, fruit, powdered sugar, chocolate cream or syrup of your choice.
