Chocolate chip muffins: the foolproof recipe
Should you use melted butter or oil for really moist muffins?

- 250 g flour
- 1 sachet of baking powder
- chocolate chips
- 1 pinch of salt
- 1 egg unit
- 100 g sucre
- 1 sachet of vanilla sugar
- 150 ml milk
- 120g melted butter
Method · 10 min
- Mix flour, baking powder, chocolate chips and salt in a bowl. In another bowl, mix sugar, vanilla sugar, egg, milk and melted butter.
- Incorporate everything into the flour-chocolate chip mixture without overworking the dough. Pour into the molds. Bake for 25 minutes in a 180° oven.
Oil makes muffins softer and more tender, even after they've cooled. Melted butter provides a richer, more flavorful taste, but a slightly denser texture. For truly moist results, oil is generally the best choice.
How to get a nice dome on top of muffins?
Preheat the oven to a very high temperature (approximately 220°C/425°F). Bake the muffins for 5 minutes at this temperature, then reduce the heat to 180°C/350°F and bake until done. This temperature difference will cause the batter to rise quickly and create a nice hump.
