Apple sheet cake

The delicious recipe for this apple sheet tart was created by Lisanne. We love apple crumble and we think it's such a fun idea to put it on a sheet tart. You can make this apple sheet tart very easily using Tante Fanny's fresh rolled puff pastry. Tasty, simple, and quick to prepare.

Ingredients · Servings 2
  • 1 roll of fresh puff pastry (Tante Fanny)
  • 2 sweet and sour apples (e.g. Jonagold)
  • 40 g raisins
  • 150 g almond paste
  • 2 sachets of vanilla sugar
  • 1 tsp cinnamon
  • 200 gr mascarpone
  • 3 tablespoons of honey
  • 75 g flour
  • 75 g sugar (+ a little extra for the dough)
  • 60 g cold butter
  • optionally a splash of unwhipped cream
Method · 55 min
  1. Roll out the puff pastry and place it on a baking sheet. Prick holes in the dough and draw a line along the edge with your knife. Sprinkle a little sugar over the edge. Meanwhile, soak the raisins in lukewarm water for at least 15 minutes.
  2. Preheat the oven to 200 degrees (fan oven). Cut the apples into thin half-slices and mix them with the vanilla sugar and cinnamon. Add a splash of water (or an egg) to the almond paste and mash until softened. Spread this over the puff pastry and place the apple slices on top. Pat the raisins dry and distribute them over the apples. Bake the tart for 20 minutes at 200 degrees until golden brown.
  3. Mix the mascarpone with the honey and stir well. If the mascarpone remains a bit thick, add a splash of unwhipped cream. Place in the refrigerator.
  4. Mix the cold butter with the flour and 75 grams of sugar. Knead this by hand into a crumbly dough. Spread this over a baking sheet or in an oven dish and bake for 15–20 minutes at 200 degrees until the crumbs are browned.
  5. Next, spread the honey-mascarpone cream over the apple crumble tart and sprinkle with the crumble. Garnish with some powdered sugar, if desired.
