Mini galettes with stone fruit

What do you do when you have leftover stone fruit? That's right, you make something delicious with it. And that is how we came up with the idea to make mini galettes with stone fruit. Sometimes you get a little too enthusiastic when grocery shopping and accidentally buy way too much.

Stone fruit is still widely available. So make good use of it while it lasts. I love stone fruit. Peaches, nectarines, plums, cherries—I think it's delicious. Combined with the cream cheese in these mini galettes, it has a wonderfully fresh and sweet taste. Perfect with coffee or as a dessert. Serve with whipped cream or a scoop of ice cream. Yum!

Ingredients for 6 servings 6 slices of puff pastry (thawed) 200 g cream cheese 2 tbsp powdered sugar 2 plums 1 nectarine 1 peach 1 egg Sugar

Here's how to make it. Preheat the oven to 200 degrees Celsius (fan-assisted).

Pit the fruit and cut it into thin slices.

Mix the cream cheese with the powdered sugar. Round off the corners of the puff pastry.

Spread the cream cheese on the middle section of the puff pastry.

Distribute the fruit over the cream cheese and fold the puff pastry inwards all around.

Brush the edges with egg and sprinkle some sugar over them.

Bake the mini stone fruit galettes in the oven for 20 minutes until golden brown. You can serve the galettes either warm or cold.
