Greek mini pizzas

I can safely say that pizza is my favorite guilty pleasure. It actually never gets boring, because there are endless combinations. I thought it would be nice to make a Greek-style pizza for a change. The result is these Greek mini pizzas. The advantage of these mini pizzas is that they are ready super fast.

My boyfriend is half Greek, and that inspires me to explore Greek cuisine. I love it! That’s how I came up with the idea to give the mini pizzas a Greek twist. You don’t see this flavor combination on the menu at an Italian restaurant very often. Maybe they really should start doing that? I would certainly appreciate that. These mini pizzas are great as a snack or with drinks. Or for lunch! Actually, there is always a suitable time to make these mini pizzas.

Ingredients for 4 pizzas: 4 slices of puff pastry, 2 tablespoons aioli, half a red onion in rings, 16 leaves of spinach, 50 g feta, bunch of rosemary.

Here's how to make it. Preheat the oven to 210 degrees (fan oven). In the meantime, let the puff pastry slices thaw.

Make small holes in the puff pastry by pricking it with a fork. This prevents the puff pastry from puffing up in the oven.

Make the aioli or use a ready-made version. A recipe for homemade aioli will appear on the site soon. This time, I mixed 2 tablespoons of mayonnaise with 1 clove of garlic. Spread the aioli on the puff pastry.

Place some spinach leaves on the aioli. Cut the half onion into rings and crumble the feta.

Put the mini pizzas in the oven for 15 minutes. Then spread the feta and onion on the mini pizzas and bake for another 5 minutes until the mini pizzas are golden brown.

Garnish the mini pizzas with a sprig of rosemary.
