- Preheat oven to 180°C. Separate the yolks from the whites. Beat the whites with sugar until stiff peaks form, then mix with the yolks and sifted flour.
- Pour the batter into a greased and parchment-lined pan. Bake for 25–30 minutes, then let cool.
- Prepare the cream. Soak the gelatin in a small amount of water. Pour the grape juice into a saucepan and bring to a boil. Add the starch and sugar dissolved in 0.25 cups of water. Cook, stirring, for 3–4 minutes until the mixture reaches the consistency of a thick jelly.
- Using a mixer, beat the prepared jelly with the wine, lemon juice, and lemon zest. Melt the gelatin in a double boiler. Add it to the mixture, stir, and let cool. Whip the cream until stiff peaks form, then fold into the mixture.
- Cut the sponge cake into 2 layers and soak them in honey and rum. Line a springform pan with parchment paper and place one layer on the bottom. Spread half the cream over it. Top with the second layer and spread the remaining cream on top. Freeze for 15 minutes.
- Dissolve the sugar in the wine, add the gelatin, and let sit for 15 minutes. Place the mixture in a double boiler and cook, stirring, until the gelatin dissolves. Cool. Arrange the grapes on the cake and pour the gelatin mixture over it in 2-3 stages, placing the cake in the freezer for 10 minutes each time. Refrigerate the cake until serving.
It's best to make this grape jelly cake the night before, allowing its consistency to stabilize overnight. As for the grapes, we suggest using two types: light and dark, but be sure to use seedless ones. You can make this cake not only with freshly picked berries but also with frozen ones, if you're stocking up on them during grape season.
