Surprise everyone this Easter with the Torta Pasqualina Centerpiece!

The Torta Pasqualina Centerpiece is the perfect idea for those looking for an Easter appetizer that will enchant guests at first sight. This spectacular version combines the aesthetics of a savory wreath with extreme practicality, becoming the decorative centerpiece of your meal without taking up precious time.

Ingredients · Servings 4
  • Round puff pastry roll 1
  • Spinach 500 gr
  • 6 hard boiled eggs
  • Egg 1
  • Grana Padano 30 g
  • 200g cow's milk ricotta
  • Cipolla 100 gr
  • Extra virgin olive oil (EVO)
  • Sale
  • Baby
  • Egg
  • Sesame seeds
Method · 1 h
  1. To prepare your Torta Pasqualina Centerpiece, start by preparing the vegetables. Wash the spinach thoroughly, place it in a pot, and add a little water and a pinch of salt. Cook the spinach for about 10 minutes, monitoring the consistency until it's tender and ready for the filling.
  2. In another pot, place the eggs and cover them completely with cold water. Bring to a boil and cook for about 8 minutes: this is the perfect amount of time to obtain hard-boiled eggs with the ideal consistency, perfect for adding whole to the filling. Once ready, drain the eggs and immediately run them under cold running water. This little trick not only stops the cooking process, but also makes it much easier to peel them perfectly, ensuring a flawless finish when you cut your slice of Easter pie.
  3. While the eggs are heating, focus on the vegetables: peel and finely chop the onion. Then, take the cooked spinach and carefully squeeze it dry: removing excess water is the key to keeping the pastry of your Easter pie centerpiece intact. Once cooled, carefully peel the hard-boiled eggs. Run them under running water for a moment: this will remove any small shell residue and make the surface perfectly smooth, ready to be inserted intact into the heart of the wreath.
  4. In a large nonstick skillet, drizzle a little extra virgin olive oil and add the chopped onion. Sauté over low heat until golden and translucent, but do not burn. Once the onion is ready, add the spinach. Let it cook in the skillet for a few minutes, stirring well to blend the flavors. This step is crucial because it allows you to remove any remaining moisture, ensuring a dry filling that doesn't compromise the flavor of the pastry.
  5. Transfer the flavorful spinach to a large bowl. Add the ricotta, grated Grana Padano, and the egg reserved for the filling. Mix thoroughly until smooth and creamy. Make sure the ricotta is perfectly incorporated into the spinach: this balance of flavors and textures is the secret to a filling that will remain moist and flavorful even after cooking.
  6. Taste the mixture and season with salt and pepper to taste. Continue stirring vigorously until the filling is perfectly blended and flavorful. Make sure the consistency is uniform: this step ensures that each slice of your Easter pie centerpiece has the perfect balance between the saltiness of the cheese and the sweetness of the ricotta.
  7. Unroll the round puff pastry sheet directly onto the baking sheet. To achieve the perfect shape, use this trick: place a bowl in the center of the sheet. This will serve as a visual guide to distribute the filling evenly and create a flawless circle. Spread the ricotta and spinach mixture in a circle all around the bowl, leaving the outer edges free and the center covered by the bowl. Once the circle is complete, carefully place the 5 or 6 hard-boiled eggs on the bed of filling, spacing them apart.
  8. At this point, lift and remove the bowl from the center. Using a knife or pastry wheel, make a cross-shaped cut in the center of the empty pastry, then make two more diagonal cuts until you obtain 8 evenly spaced triangular segments. Begin shaping your masterpiece: fold the outer edges of the pastry inward, over the filling. Then, take the tips of the central triangles and fold them outward, securing them over the outer wreath. This interweaving will create the dramatic effect typical of an Easter centerpiece. For a professional result, brush the entire surface of the pastry with beaten egg: this step will ensure a deep and even browning in the oven. Finally, sprinkle with sesame seeds to decorate and add a touch of extra crunch to your savory wreath.
  9. It's time for the finishing touch: bake your Torta Pasqualina Centerpiece in a preheated oven at 180°C (350°F) for about 30 minutes. Make sure to place the pan on the middle shelf of the oven to ensure even browning of both the base and the center tips. Once the pastry is puffed up and a beautiful golden color, remove your masterpiece from the oven. Your Torta Pasqualina is now ready, but don't rush it: let it cool thoroughly before serving. This brief rest will allow the ricotta and spinach filling to firm up, ensuring perfect, spectacular slices when cut. Storage note: We recommend enjoying this wreath the same day. Since the base is made of puff pastry, it doesn't lend itself well to prolonged storage: the moisture in the filling would tend to make it lose its typical crispness. Chef's tip: For an even shinier finish, you can add a tablespoon of milk to the egg yolk before brushing the surface. For an extra touch of flavor, try replacing the sesame seeds with poppy seeds to create an even more striking color contrast.

If you love traditional flavors but are looking for a smarter solution, this recipe is for you: thanks to the use of ready-made puff pastry, you can serve a golden and crispy crown in just 30 minutes. It's the ideal variation if you want to avoid the time-consuming preparation of the classic Torta Pasqualina, while still maintaining the unmistakable ricotta and spinach filling.

The secret to its success lies in the interplay of volumes and colors: the hard-boiled eggs that reveal themselves when cut are a surprise that always wins everyone over. And if you're short on oven space or looking for a modern alternative, remember that you can also try our Torta Pasqualina in the air fryer, for an even quicker and crispier result.
