After plenty of burger nights and lots of testing, I’ve finally landed on the perfect burger seasoning recipe. This simple blend of pantry spices adds bold, savory flavor and helps create burgers that are juicy, flavorful, and every bit as satisfying as my favorite take-out version. Best of all, it takes just 5 minutes to mix together.

Say bye-bye to boring patties, because I’ve finally discovered the perfect spice blend that makes the most fabulous and delicious burgers! If you’ve already tried my homemade burger recipe, then you’re definitely going to love this bold blend of spices. All it takes is a couple of staple pantry spices like paprika, pepper, and ground mustard, a quick mix, a rub, and you’re ready to cook. I always keep this seasoning on hand because it’s also great with other proteins like steak, pork chops, chicken breast, and even turkey burgers. Once you’ve cooked these spiced burgers to juicy perfection, make sure to top them off with some melty cheese, crunchy pickles, and a smear of your favorite burger sauce!

Patrick – ⭐⭐⭐⭐⭐ So much better than store-bought! The flavor is bold without overpowering the burger. This is my new go-to blend.

Sommer’s Recipe Highlights

Simple Ingredients, Bold Flavors – Like with my blackened seasoning, I’m obsessed with how easy it is to make this seasoning, and just how much bold flavors it delivers. All you need is smoked paprika, onion and garlic powder, ground mustard, pepper, salt, and a touch of cayenne for heat. These are pretty much classic spices you’ll find in almost any cupboard!

Great for Grilling Season – Make sure to keep a big batch of this seasoning on hand throughout the summer. Believe me, you’ll be generously rubbing this onto your favorite burger patties (maybe even my new deer burger recipe!) every time you heat up the grill.

Versatile – Not only is this spice blend totally customizable depending on your love of heat, but it also pairs great with pretty much any protein. I love to rub it onto turkey burgers, pork chops, steaks, and even salmon fillets!

Key Ingredients and Tips

Smoked paprika – I love to use smoked paprika because it gives a ton of depth and rich smoky flavor to these burgers. Plus, it adds a gorgeous orange hue.

Onion and garlic powder – Both of these spices add a subtle savory sweetness that is essential for any burger.

Ground mustard – This gives a slight tanginess and sharp flavor that pairs perfectly with the smokiness from the paprika.

Cayenne pepper – I am a huge fan of spiciness, and a pinch of this stuff goes a really long way! Feel free to adjust how much you use based on your spice preference.

How to Make

Mix the Seasoning – First, I measure all the spices into a small bowl and whisk everything together until the blend is evenly combined. This only takes a minute, but it ensures every bite of your patty is packed with flavor.

Season the Burgers – Next, I generously sprinkle the seasoning over both sides of the burger patties, gently pressing it into the meat so it sticks well. I usually season the patties just before cooking, but you can do this in advance and refrigerate the patties. The flavor actually sinks deeper into the patties and flavors the inside. PS, don’t be shy here… The seasoning is what transforms an ordinary burger into something truly mouthwatering!

Expert Tips

Keep the Patties the Right Thickness – For the juiciest burgers, I make my patties about 1 inch thick before cooking. This thickness helps them stay tender and flavorful while still developing a crisp crust. If you like a thinner burger, I’d skip the thick patties altogether and make seasoned smash burger recipe instead!

Start with a Hot Pan – When cooking burgers on the stovetop, I always let the skillet get nice and hot before adding the meat. That initial blast of heat creates a delicious crusty sear on the outside while helping lock in the juices on the inside. Resist the urge to move the patties around too soon, letting them sit undisturbed creates the best crust.

Use Fresh or Fully Thawed Patties – This seasoning blend works best on freshly formed burger patties or frozen burgers that have been completely thawed. Frozen patties straight from the freezer tend to cook unevenly and won’t absorb the seasoning quite as well.

Cook to Your Preferred Doneness – For medium-rare to medium burgers, I typically cook the patties for about 2 to 4 minutes per side, depending on thickness. For medium-well burgers, I aim for 4 to 5 minutes per side. If you want perfectly cooked burgers every time, an instant-read thermometer is your best friend.

Let Them Rest – Once the burgers come off the heat, I like to let them rest for a few minutes before serving. This simple step helps the juices redistribute throughout the meat, making every bite extra juicy and flavorful.
