- 800 g potatoes (I used russet)
- 115 g cornstarch
- 2 tbsp neutral oil
- 2 tbsp milk
- 1 tbsp garlic powder (more or less according to personal preference)
- 1 tsp smoked paprika
- 1/2 tsp salt (more or less according to personal preference)
- 3 tbsp parsley
- 60 g parmesan (shredded finely)

- Place the potatoes in a pot of water and boil until they are fork-tender. Drain and allow them to cool slightly.
- In a large bowl, mash the boiled potatoes until smooth. Add the cornstarch, neutral oil, milk, garlic powder, smoked paprika, salt, parmesan cheese, and parsley. Mix until well combined and the mixture is smooth and thick.
- Transfer the potato mixture to a piping bag fitted with a round tip.
- In a deep pan or fryer, heat oil to 350°F (175°C).
- Squeeze the potato mixture out of the piping bag to form sticks, cutting each one as it emerges. Carefully place the sticks into the hot oil in batches, frying until they are evenly golden brown and crispy.
