Simply delicious! Creamy Tuscan-style chicken with spinach

Sometimes everyday life calls for a little escape. When the next vacation seems a long way off and the weather outside is rather dreary, a good meal brings just the right change to the table. A dish with a rich sauce and Mediterranean flavors quickly transforms your own kitchen into a cozy retreat.

Ingredients · Servings 4
  • 1 onion
  • 2 cloves of garlic
  • 150 g Baby spinach
  • 600g chicken thighs
  • salt and pepper
  • 1 tsp sweet paprika powder
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 100g dried tomatoes (🛒)
  • 250 ml chicken broth
  • 200 ml Stage
  • 10 g fresh basil
Method · 30 min
  1. Peel the onion and garlic and dice them finely. Wash the spinach and spin it dry.
  2. Pat the chicken thighs dry and season them with salt, pepper and paprika.
  3. Heat olive oil in a large frying pan and fry the chicken for 3-4 minutes per side until golden brown. Then remove it from the pan and set it aside.
  4. Reduce the heat to medium, add the diced onion to the pan and let it become translucent.
  5. Then add garlic and oregano and sauté briefly.
  6. Add the sun-dried tomatoes and stir everything thoroughly. Add the spinach as well and stir again.
  7. Pour in the broth and cream and let the sauce simmer for 10 minutes.
  8. Place the seared chicken back in the pan, cover it and let everything simmer for 10 minutes.
  9. Stir the basil into the sauce, let it sit for a few more minutes, and then serve your Tuscan creamed chicken.

Although the result is visually and gustatorily reminiscent of a visit to your favorite restaurant, the effort required to cook this Tuscan creamed chicken is minimal. All you need is a large pan. This not only saves time on washing up but also ensures that all the flavors from browning are transferred directly into the sauce. The browned bits on the bottom of the pan dissolve when you add the stock, giving the creamy sauce a rich, savory flavor.

The true highlight of this dish is the rich sauce. It combines the salty notes of the broth with the mildness of the cream and the subtle acidity of the tomatoes. The gentle simmering thickens it slightly, allowing it to coat the meat beautifully. With such an aromatic sauce, not a drop is usually left on the plate. A fresh ciabatta or a crusty baguette is perfect for sopping up the remaining sauce. The bread absorbs the creamy mixture and adds a touch of texture to the tender poultry. If desired, you can lightly rub the bread with a halved garlic clove or toast it briefly in a little olive oil beforehand.
