Quick puff pastry fruit tart

This quick fruit puff pastry tart is an easy and spectacular dessert, an alternative to the classic fruit tart made with shortcrust pastry.

Ingredients · Servings 4-6 people
  • Whole milk, 250 ml
  • Eggs, 60 g
  • Granulated sugar, 50 g
  • Corn starch or 00 flour, 20 g
  • Vanilla extract, 1/2 teaspoon
  • Round puff pastry, 1 disc
  • Strawberries, 200 gr
  • Kiwi, 1-2
  • Blueberries, 50 gr
  • Apricots, 1-2
Method · 1 h 20 min
  1. To prepare the quick puff pastry fruit tart, start with the cream. Combine the eggs, sugar, and vanilla powder (1) in a saucepan, then whisk together. Add the sifted flour and mix well.
  2. Heat the milk and gradually pour it into the egg mixture (2), continuing to mix.
  3. Place on the heat and cook gently, stirring continuously, until you obtain a smooth cream (3). Pour this into a glass or ceramic container, cover it with cling film and leave it to cool.
  4. Prepare the puff pastry base: place the roll with all its baking paper in a low 22 cm diameter baking tray, then fold the edges inwards (4).
  5. Prick the entire surface with the prongs of a fork (5), place a disc of baking paper in the centre and add some weights or dried legumes for blind baking.
  6. Bake the puff pastry in a hot oven at 190°C for approximately 15 minutes, then remove the weights and bake for another 5 minutes. Remove the base from the oven and leave to cool on a serving plate (6).
  7. Spread plenty of cream on the puff pastry base, leaving the edges free (7).
  8. Level the cream with the back of a spoon (8).
  9. Decorate the surface with sliced ​​strawberries (9).
  10. Add the kiwi slices (10).
  11. Finish with blueberries and sliced ​​apricots (11).
  12. The quick fruit puff pastry tart is ready to be enjoyed (12).
