Whole Orange and Almond Cake, Lactose-Free and Gluten-Free

  • 85 g Rice flour
  • 100 g finely ground almonds
  • 40 g Sunflower oil
  • 1 teaspoon yeast
  • 1 pinch of baking soda

  • Orange juice (enough to make a glaze)

Place the orange in a pot of cold water and bring to a boil. Leave until cooked, about 1 hour.

Drain the orange and let it cool, then cut it, remove the seeds and blend it until it becomes a puree.

Grind the almonds finely and then mix them with the flour, baking powder, and bicarbonate of soda.

Beat the whole eggs with the sugar.

Add a pinch of salt.

Add the flours and mix gently.

Now add the orange puree and the oil, always mixing delicately.

Prepare a 20 cm pan and insert the dough.

Bake at 180°C for about 40-45 minutes until golden brown. Then leave the cake in the pan for another 5 minutes before removing it from the pan.

Now prepare the icing with the icing sugar and a little orange juice.

Using parchment paper, create a small piping bag with a small hole and pipe the frosting. Decorate the cake with swirls as desired.

Sprinkle with a little icing sugar.
