Easy High-Protein Banana Oat Pudding

This baked banana protein oat pudding is a simple, nourishing breakfast (or post work-out treat) that comes together in minutes. Made with ripe banana, oats, yogurt, and a boost of protein powder, it bakes into a soft, lightly sweet pudding with a cake-like texture.

Ingredients · Servings 1
  • 1 medium ripe banana ((the riper, the sweeter))
  • 1 egg
  • 1 tablespoon vanilla or unflavored protein powder
  • ⅓ cup rolled oats ((about 30 g))
  • ¼ cup plain drinking yogurt ((about 60 ml))
  • fresh or frozen berries ((e.g., blueberries or raspberries))
Method · 35 min
  1. Preheat the oven to 180°C (355°F).
  2. Lightly grease a ceramic ramekin or small baking dish.
  3. Mash the banana with a fork until smooth.
  4. Add the egg, protein powder, oats, and yogurt. Mix until smooth and well combined.
  5. Pour the mixture into the prepared ramekin and smooth the top. Scatter the berries over the surface.
  6. Bake for 25–30 minutes, or until set and lightly golden on top.
  7. Serve warm or allow to cool before serving.

Perfect as a single-serve breakfast or healthy dessert and snack, this recipe is both satisfying and versatile. Enjoy it warm straight from the oven or let it cool for a firmer texture: either way, it’s a balanced, protein-rich option that feels indulgent while staying wholesome.
