Pour the 00 flour and the Manitoba flour, the dried brewer's yeast and two teaspoons of sugar into a bowl.

Mix and gradually add the warm milk, eggs, sugar, the remaining milk, the soft butter and the orange zest.

Knead until smooth and let rise until doubled in size (about 2 hours). After this time, roll out the dough with a rolling pin to about 1.5 cm thick and shape the doughnuts using an 8 cm diameter pastry cutter (or a glass).

Place them on a baking sheet lined with parchment paper and let them rise for another half hour. Fry the bomboloni in plenty of seed oil, turning them a couple of times with a wooden spoon.

Once they're golden brown, drain them and roll them in sugar. Make a hole in the center and fill the bomboloni with your favorite filling (I used custard and Nutella).

Now run and enjoy them in all their goodness!

The chef recommends:

You can fill them with the creams you like most!
