Zucchini and shrimp spaghetti with saffron cream and parmesan cheese
Procedure
- 200 g peeled prawns
- Small courgettes
- Pachino cherry tomatoes

Let's start by putting the extra virgin olive oil in a pan with the very finely chopped onion and let it brown, it will take a few minutes.
Now add the courgettes cut very small, the tomato cut to approximately the same size as the courgettes and let it simmer for 5 minutes, add the prawns and sauté them for a few minutes, no more.
Meanwhile, add the whole wheat spaghetti or your favorite pasta and cook.
We put the parmesan in a nice clean bowl.
Add the spaghetti to the sauce and sauté for a few minutes with a small ladle of the cooking water so that everything is combined.
Add a ladle and a half (adjust according to your taste) of Parmesan cheese and whisk until creamy. Once it's ready, add the spaghetti and sauce and mix everything together. Serve immediately.
