Yakisoba (Japanese udon noodles with lots and lots of vegetables)

It’s time again for an easy and healthy recipe with lots and lots of vegetables. You can usually find that in Japanese cuisine, like with this yakisoba. Traditionally, yakisoba is a Japanese stir-fry dish with buckwheat noodles, but we are using those delicious thick udon noodles.

If you want to finish this easy recipe really quickly, buy ready-made udon noodles. You can find them in most supermarkets and certainly at Asian grocery stores.

It is best if you can find pickled ginger that is such a beautiful bright pink (gari). Can't find that? Then use regular pickled ginger. You could even color it a little with a drop of beetroot juice. Cut the ginger into thin strips and place them in a small pile on top of the yakisoba. Delicious!

Yakisoba recipe

  • Start by toasting the sesame seeds, if you haven't already done so.
  • Heat a wok over high heat until it smokes. Add the oil and stir-fry the onion, parsnip, and spring onion until they begin to brown. Add the white cabbage and bean sprouts to the wok and cook until they have reduced by about a third.
  • Now briefly stir-fry the shiitake or button mushrooms as well. Then add the sauces: the sesame oil, soy sauce, mirin, and rice vinegar.
  • Finally, add the udon noodles and let them heat through briefly.
  • Stir everything well and then serve immediately with the sesame seeds, fried onions, and pickled ginger.
