Papa a la huancaína with soda crackers: easy step by step (VIDEO)

How to prepare papa a la huancaína with soda crackers?

No dish captures the essence of Peruvian cuisine more authentically than the delicious papa a la huancaína, with its unique sauce that perfectly complements the boiled potatoes. The potato, a tuber native to the high Andes, has been a staple food since ancient times. In Peru, there are diverse varieties of potatoes, each packed with antioxidants beneficial to health. With hues ranging from red to purple, this characteristic makes the potato a tuber rich in potassium and highly nutritious.

INSTRUCTIONS

  • Wash the yellow potatoes very well and cook them in water to cover with a little salt. Peel and slice.
  • Clean the yellow chili peppers by removing the stem, seeds, and veins. Cut into pieces.
  • Cut the red onion into pieces as well.
  • Heat a generous amount of oil in a frying pan and prepare a sofrito with the chili peppers, onion, garlic cloves and a pinch of salt. Let it cool.
  • Blend the cooled sofrito with the cheese, cracker, milk, and salt to taste. To improve the consistency, drizzle in a little oil at the end.
  • Serve the huancaína sauce over the yellow potatoes. Accompany with lettuce, hard-boiled egg, and olives.

TIPS

  • Add the salt gradually to the Huancaína sauce, as the fresh cheese might be salty.
