No-bake bread pudding: the easy recipe everyone will want to make again

INSTRUCTIONS

  • Prepare the caramel: In a saucepan or directly in the mold, place the sugar and water over medium heat. Let it melt and turn golden brown. Swirl the mold to coat the bottom well and let it cool.
  • Soak the bread: Tear the bread into pieces and place it in a large bowl with the milk. Let it sit for 10-15 minutes until it is very soft.
  • Blend the mixture: In a blender, process the bread with milk, eggs, sugar, vanilla, and lemon zest or cinnamon. The mixture should be smooth, neither too runny nor too thick. Once everything is ready, pour the mixture into the caramelized mold.
  • Cook in a water bath, WITHOUT AN OVEN: In a large pot with a lid, place a rack or a cloth at the bottom and add hot water halfway up the sides of the mold. Place the mold inside, cover tightly, and cook over medium-low heat for about 60 to 75 minutes. Insert a toothpick; if it comes out clean, it's ready.
  • Cool and unmold: Wait until it's at room temperature, then refrigerate for at least 4 hours (ideally overnight). Unmold when cold to prevent breakage.
  • Enjoy: Serve a portion and decorate with dulce de leche, cream, various fruits or simply caramel.

TIPS

  • To add flavor, you can add raisins, chocolate pieces or dulce de leche to the smoothie.
  • If you don't have a blender, you can also mix it by hand if the bread is well crumbled.
  • To add more creaminess, add 1 splash of heavy cream or 1 tablespoon of melted butter to the mixture.
  • Make sure the water doesn't touch the edge of the mold or get into the mixture. Use aluminum foil or a metal lid for extra protection.
  • Ideally, prepare one day in advance.
