Homemade Peruvian chicken stew

Chicken stew is the perfect recipe to transform any lunch into a Creole feast full of flavor, juiciness and tradition in just a few minutes.

Chicken stew is the ideal option for those looking for a hearty, homemade dish with that irresistible flavor.

This recipe elevates the classic homemade stew thanks to a well-concentrated dressing of tomato, onion and mushrooms with bay leaf, enhanced with a touch of wine and the softness of golden raisins that absorb all the juice from the tender meat.

A second course that is hearty, juicy and perfect to enjoy, accompanied by its yellow potatoes and good white rice.

INSTRUCTIONS

  • Fry the onion with the garlic, tomato, and carrot. Then add the tomato paste, pepper, and cumin, and cook for 10 minutes.
  • Marinate the chicken pieces with the vinegar, a pinch of cumin, the garlic, and salt. Then, sear them in a pan and add them to the marinade along with the potatoes.
  • Add the carrot, peas, bay leaves, mushroom, white wine, sweet wine, raisins, and broth.
  • Cook the preparation for 25 minutes until the chicken is tender and the flavors are combined.
  • Season with parsley, serve and accompany with white rice.
