Do Pineapples Dream of Tiki Drinks? Cocktail Recipe
“What does it even mean to be a tiki drink?” is a question that’s been around for almost as long as the style has. It’s also a question that this recipe poses.
Ingredients
Serving: 1
- 2 ounces pineapple bark–infused rum (see Editor’s Note)
- 1/2 ounce Cocchi Americano
- 1/4 ounce white port
- 1/4 ounce allspice dram, such as St. Elizabeth
- 1 dash Angostura bitters
Directions
- Combine all of the ingredients in a mixing glass, top with ice and stir until well-chilled, about 20 seconds.
- Pour over a lump of clear ice into a bodega or rocks glass.

Wash the pineapple, then slice off the top and bottom of the fruit and discard.
Slice the bark (also known as rind) off the pineapple, then quarter and core the pineapple, reserving the flesh for juicing or another application.
In a nonreactive container, infuse the rum with the core and bark, refrigerating for 1 week. Strain through a fine-mesh sieve or cheesecloth and re-bottle. Keeps, refrigerated, indefinitely.
