Creamy oven-roasted cauliflower
These oven-roasted cauliflower florets with cheese sauce are a delicious and easy dish for every day. Tasty as a side dish, but also ideal as a vegetarian meal with potatoes, a vegetarian schnitzel, or a salad.

- 400 gr bloemkoolroosjes
- 30 gr boter
- 30 gr bloem
- 400 ml melk
- 100 gr geraspte kaas
- 20 gr Parmezaanse kaas
- 1 tl mosterd
- 1 tl gerookt paprikapoeder
- Snufje peper en zout
- 2 el panko of paneermeel
- Extra geraspte kaas
Method · 35 min
- Verwarm de oven voor op 200 graden.
- Kook de bloemkoolroosjes in een pan met water in circa 5 minuten beetgaar. Giet af en laat goed uitlekken. Verdeel de bloemkool over een ovenschaal.
- Smelt de boter in een steelpan op laag vuur. Voeg de bloem toe en roer met een garde tot een glad mengsel. Laat dit 1–2 minuten zachtjes garen.
- Schenk de melk beetje bij beetje bij het botermengsel en blijf goed roeren met een garde tot een gladde saus ontstaat. Laat de saus zachtjes koken tot deze dikker wordt.
- Haal de pan van het vuur en roer de geraspte kaas, kaas, mosterd en het gerookt paprikapoeder door de saus. Breng op smaak met een snufje peper en zout.
- Schenk de kaassaus over de bloemkool en meng voorzichtig zodat alles bedekt is. Meng in een schaaltje de panko met wat extra geraspte kaas en strooi dit over de bloemkool.
- Zet de ovenschaal in de oven en bak het gerecht 20–25 minuten, tot de bovenkant goudbruin en krokant is.
Creamy oven-roasted cauliflower
- 400 g cauliflower florets
- 30 g butter
- 30 g flour
- 400 ml milk
- 100 g grated cheese
- 20 g Parmesan cheese
- 1 tsp mustard
- 1 tsp smoked paprika
- Pinch of salt and pepper
Other:
- 2 tbsp panko or breadcrumbs
- Extra grated cheese
Preparation method:
- Preheat the oven to 200 degrees.
- Cook the cauliflower florets in a pan with water for about 5 minutes until al dente. Drain well. Distribute the cauliflower over an oven dish.
- Melt the butter in a saucepan over low heat. Add the flour and stir with a whisk until a smooth mixture is formed. Let this cook gently for 1–2 minutes.
- Pour the milk into the butter mixture little by little, stirring well with a whisk until a smooth sauce forms. Let the sauce simmer gently until it thickens.
- Remove the pan from the heat and stir the grated cheese, cheese, mustard, and smoked paprika into the sauce. Season to taste with a pinch of salt and pepper.
- Pour the cheese sauce over the cauliflower and mix gently so that everything is coated. In a small bowl, mix the panko with some extra grated cheese and sprinkle this over the cauliflower.
- Place the baking dish in the oven and bake the dish for 20–25 minutes, until the top is golden brown and crispy.
