Pasta with tomato sauce

The scent of freshly picked tomatoes, the authentic flavor of tradition: tomato pasta made with only fresh ingredients is a whole different story.

When we talk about pasta with tomato sauce and fresh ingredients, we're delving into the heart of authentic Italian cuisine, the kind that requires no shortcuts. Forget about passata and rediscover the full, natural flavor of freshly cut tomatoes, juicy and fragrant. The title is clear: here we prepare a dish where every ingredient is fresh, authentic, and made to order, without compromise. The result is a pasta dish that truly tastes of summer, of the garden, and of simplicity done well.

Using only fresh tomatoes completely changes the final result. The sauce isn't just a condiment; it takes center stage with its vibrant texture and slightly sweet and tart flavor. In this recipe, the freshness of the ingredients is the real secret: from the extra virgin olive oil to the basil, everything contributes to creating a perfect balance. It's a seemingly simple dish, but precisely because of this, it requires attention to detail and the choice of ingredients.

Recipe ingredients

  • 320g pasta (spaghetti or any other shape you like)
  • 500 g of fresh ripe tomatoes
  • 1 clove of garlic
  • 4 tablespoons of extra virgin olive oil
  • Sale q.b.
  • Fresh basil to taste

Step-by-step recipe procedure

  • First, thoroughly wash the fresh tomatoes under running water. Make a small cross-shaped incision in the skin and immerse them in boiling water for a few seconds: this step will allow you to peel them easily and effortlessly.
  • Drain the tomatoes and immediately transfer them to cold water, then remove the skin and seeds and dice the pulp. This is the heart of the recipe: processing fresh tomatoes correctly guarantees a truly superior end result.
  • Pour the extra virgin olive oil into a large skillet and add the lightly crushed garlic clove. Cook over low heat until the oil takes on a fragrant aroma, without burning the garlic.
  • Add the chopped fresh tomatoes and raise the heat slightly. Cook for about 10-15 minutes, stirring occasionally: the tomatoes should soften but remain bubbly, not overcooked.
  • Season with salt and add a few hand-torn fresh basil leaves. This step enhances the aroma and makes the sauce even more aromatic.
  • Meanwhile, bring a large pot of salted water to a boil and cook the pasta. Drain it al dente, reserving a little of the cooking water.
  • Transfer the pasta directly to the pan with the sauce and stir over medium heat. If necessary, add a little of the pasta cooking water to bind the sauce and achieve a naturally creamy consistency.
  • Mix well to blend all the flavors and turn off the heat when the pasta is perfectly coated in the sauce.
  • Serve immediately with a few fresh basil leaves and, if desired, a drizzle of raw olive oil to further enhance the aromas.

Pasta with tomato sauce, made with only the freshest ingredients, is much more than a simple first course: it's a return to the essentials, where every flavor is recognizable and authentic. Forgetting pureed tomatoes means choosing a more conscious cuisine, based on simple yet precise gestures. The result is a light, fragrant, and incredibly flavorful dish, capable of expressing tradition with every forkful. Preparing it this way means rediscovering the true flavor of tomatoes and bringing a timeless classic to the table in its purest form.
