Receta para un delicioso guiso con albóndigas

  • 1 cabeza de colinabo
  • 25 kg de patatas
  • 30 kg de zanahorias
  • 8 onzas de vino
  • 30 kg de guisantes verdes congelados con sal
  • pimienta negra molida
  • 3 cucharadas de harina
  • Té de 400 ml
  • pequeño Azúcar
  • 1 cucharada de aceite
  • 1 cabeza de cebolla roja
  • 1 bollo
  • 50 ml de té
  • 35 kg de carne de cerdo picada
  • 1 huevo
  • 1 diente de ajo
  • 1 cucharadita de pimentón dulce
  • Solo
  • pimienta negra molida
  • Pan rallado
  • 400 ml de aceite para freír 6
Método · 45 min
  1. Para preparar el guiso, limpia el colinabo, las patatas y las zanahorias y córtalas en cubos pequeños. Derrite unas 3 cucharadas de mantequilla en una cacerola grande. Añade primero los cubos de colinabo y patata, mezcla y luego agrega suficiente agua para cubrirlos. Deja cocer a fuego lento con la tapa puesta. Cuando puedas pinchar las verduras con un tenedor, añade las zanahorias y, finalmente, cuando todas las verduras estén blandas, añade los guisantes. Mientras tanto, sazona con sal y pimienta y, si es necesario, añade un poco más de agua a la cacerola.
  2. Derrite la mantequilla restante en una sartén. Tamiza la harina, mezcla hasta obtener una consistencia homogénea y añade la sal. Luego, vierte la leche, calienta removiendo constantemente y cocina hasta que espese ligeramente. Agrega el caldo de verduras, mezcla bien y cocina durante unos minutos más. Si lo deseas, puedes añadir un poco de azúcar.
  3. Mientras tanto, para las albóndigas, limpia la cebolla roja y pícala finamente. Calienta el aceite en una sartén y sofríe la cebolla hasta que esté transparente; luego, déjala enfriar. Desmenuza el pan, sumérgelo en la leche y exprime el exceso de líquido.
  4. Coloca la carne picada en un bol, añade la cebolla, el panecillo, el huevo, el ajo pelado y machacado, el pimentón, la sal y la pimienta. Mezcla con unas cucharadas de pan rallado y forma albóndigas. Reboza las albóndigas en el pan rallado. Calienta el aceite en una cacerola grande a fuego medio y fríe las albóndigas hasta que estén doradas. Retíralas y colócalas sobre papel absorbente.
  5. ¡Sirve la sopa de verduras con las albóndigas!

To prepare the stew, clean the kohlrabi, potatoes and carrots and cut them into small cubes. Melt about 3 tablespoons of butter in a large saucepan. First add the kohlrabi and potato cubes, mix, then add enough water to cover them. Start simmering under the lid. When you can insert a fork into the vegetables, add the carrots, and finally, when all the vegetables have softened, add the green peas. In the meantime, season with salt and pepper, and if necessary, add a little more water to the saucepan.

Melt the remaining butter in a pan. Sift in the flour, mix until smooth, and add salt. Then pour in the milk, heat while stirring continuously, and cook until medium thick. Add to the vegetable stock, stir to combine, and cook for a few more minutes. You can also add a little sugar if you like.

Meanwhile, for the meatballs, clean the red onion and chop it finely. Heat the oil in a pan and sauté the onion until translucent, then set aside to cool. Tear the bread into pieces, soak in the milk, and squeeze out the excess liquid.

Put the minced meat in a mixing bowl, add the onion, the bread roll, the egg, the peeled and crushed garlic, the paprika, and salt and pepper. Mix it with a few tablespoons of breadcrumbs and form meatballs. Roll the balls in the breadcrumbs. Heat the oil in a large saucepan over medium heat and fry the meatballs until golden brown. Remove to a paper towel.

Serve the vegetable soup with the meatballs!
