Crispy marble waffles with cocoa and hazelnuts
Waffles are a top choice for many when it comes to uncomplicated baked goods. Whether for a leisurely weekend breakfast or an afternoon coffee, freshly baked waffles are always a good idea. Two-tone marble waffles offer a particularly delightful alternative to classic white batter.
- 100 g Butter
- 225 g wheat flour (type 405)
- 75 g sugar
- 1 heaped teaspoon of baking powder
- 75g ground hazelnuts 🛒
- 300 ml buttermilk (room temperature)
- 3 eggs (size M)
- 1 tsp vanilla paste
- 2 tbsp Baking cocoa 🛒
- 1 tbsp sugar
- 1–2 tablespoons buttermilk
- some neutral vegetable oil for the waffle iron
- Icing sugar for dusting

- Melt the butter in a small saucepan over low heat. Remove it from the heat and let it cool for a few minutes.
- Mix flour, 75g sugar, baking powder and ground hazelnuts in a large mixing bowl.
- Whisk together 300 ml buttermilk, eggs and vanilla paste in a second bowl. Then stir in the melted butter.
- Pour the liquid ingredients into the flour mixture and stir only until no dry flour is visible. Ignore any small lumps – over-stirring will make the waffles dense.
- Take about a third of the batter. Mix this portion with cocoa powder, a tablespoon of sugar, and initially a tablespoon of buttermilk. Add more buttermilk if necessary until both batters are approximately the same consistency.
- Let the light and dark doughs rest for about ten minutes.
- Preheat the waffle iron thoroughly on a medium to high setting and lightly coat the baking surfaces with vegetable oil.
- First, pour some light batter and then a few dollops of chocolate batter into the hot waffle iron. If desired, gently swirl a wooden skewer through the batter once.
- Close the waffle iron and bake the waffle according to the manufacturer's instructions until golden brown. Do not open the appliance prematurely to prevent the waffle from tearing.
- Carefully remove the cooked waffle and place it individually on a wire rack. Bake the remaining batter in the same way.
- Just before serving, dust the marble waffles with powdered sugar and garnish them with fresh berries.
Recipe for Marble Waffles
A classic marble cake impresses with its contrast between moist, light batter and rich, chocolatey dark batter. Sometimes, however, there simply isn't enough time to bake a large cake. Marble waffles are the ideal solution for just such moments. The batter is prepared in a very similar way, but cooks through in just a few minutes in a hot waffle iron. Ground hazelnuts not only add a warm, slightly roasted flavor, but their natural fat content also ensures that the waffles remain beautifully moist inside. A touch of vanilla paste rounds out the light batter and creates a harmonious contrast to the rich cocoa of the dark batter.
To ensure your marble waffles are crispy on the outside and soft on the inside, proper use of the waffle iron is crucial. First, heat the iron completely before adding the first portion of batter. Only with sufficient heat will the sugar caramelize immediately on the surface, forming a stable crust. Once the lid is closed, the water in the batter will begin to evaporate. Wait until hardly any steam rises from the sides. This is usually a sure sign that the waffle is cooked through.
You don't need any special precision for the typical marbled pattern. Simply place alternating spoonfuls of light and dark batter onto the bottom baking surface. If you like, you can briefly swirl a wooden skewer through the spoonfuls in a figure-eight pattern. Carefully lift the finished marbled waffles and place them individually on a cooling rack. The rack allows the steam to escape. Dusted with a little powdered sugar and accompanied by fresh berries or a scoop of vanilla ice cream, serve the still-warm waffles immediately.
