Esta es la hamburguesa vegetariana que preparo para los que comen carne

  • 1 lata (425 gramos) de frijoles negros (escurridos y secados con papel absorbente)
  • 1 taza de champiñones picados
  • 1 taza de pimiento rojo picado
  • 1 taza de espinacas frescas compactadas
  • ½ taza de cebolla picada
  • ½ taza de nueces picadas
  • 2 cucharadas de aceite de oliva (divididas)
  • 1 cucharadita de sal
  • ½ cucharadita de pimienta negra
  • 1 cucharadita de cilantro molido
  • 1 cucharadita de ajo en polvo
  • ½ taza de copos de avena
  • 1 cucharada de chile chipotle en salsa adobo
  • panecillos para hamburguesas (para servir)
Método · 45 min
  1. Precalienta el horno a 200 °C. Cubre dos bandejas para hornear con papel vegetal. Extiende los frijoles negros en una bandeja. En la segunda bandeja, agrega los champiñones, el pimiento rojo, las espinacas, la cebolla y las nueces. Rocía con 1 cucharada de aceite de oliva y espolvorea con sal, pimienta, cilantro y ajo en polvo. Mezcla bien.
  2. Hornea ambas bandejas durante 12-15 minutos y luego retira los frijoles negros. Revuelve las verduras y continúa horneando durante otros 10 minutos, hasta que estén blandas y ligeramente caramelizadas.
  3. Transfiere los frijoles, las verduras asadas y las nueces a un procesador de alimentos. Agrega la avena y el chipotle con adobo y procesa hasta que la mezcla esté integrada pero aún con una textura ligeramente granulada. Deja reposar de 10 a 15 minutos con la tapa puesta para que la avena absorba la humedad.
  4. Forma 4 hamburguesas con la mezcla. Calienta la cucharada restante de aceite de oliva en una sartén a fuego medio y cocina las hamburguesas durante 3-4 minutos por cada lado, hasta que estén doradas y crujientes.
  5. Sírvelas calientes en panecillos con tus ingredientes favoritos.

Veggie burgers are what I usually make when I open the fridge and realize my mushrooms are officially on borrowed time. This recipe uses black beans, mushrooms, bell pepper, spinach, and walnuts, all roasted first so they actually have flavor (and stay together, instead of crumbling) before getting turned into patties. I run everything through the food processor with oats to help bind it, then pan-cook them until they’re browned and crisp on the outside. These veggie burgers aren’t meant to pretend they’re beef; they’re just a solid, filling option that makes good use of vegetables I already have and works well for an easy dinner or lunch leftovers with air fryer French fries.

Veggie Burger Ingredients

Black beans: I use a can of low-sodium black beans because it’s easier, but you can use about ½ cup of dried black beans (which will yield 1 ½ cups of cooked beans) if you cook them from scratch. See my tips on how to cook dried beans.

Mushrooms: Baby bella and white work well. Really, any mushroom you’ve got in stock will work!

Red bell pepper: Here’s how to dice a bell pepper.

Spinach: Either regular or baby spinach works.

Yellow onion: White is fine if that’s what you have. Here’s how to dice an onion.

Walnuts: It’s okay if you don’t chop them perfectly evenly, because they’ll go in the food processor.

Rolled oats: Use traditional oats, not quick oats, for the best results.

Chipotle pepper in adobo sauce: You can find them in a can in the international foods aisle at most grocery stores.

Olive oil: Or any neutral oil you have.

Seasonings: You’ll need ground coriander, garlic powder, salt, and pepper.
