You can have these cheesy kimchi noodles on the table in 15 minutes
Cheesy kimchi noodles rank pretty high on our list of comfort food. And that’s not just because there is virtually nothing better than a bowl of soft noodles with lots of flavor, spice, and cheese. The 15-minute preparation time actually makes this meal even more appealing!
Kimchi noodles, then. Just to give you an idea: a bowl of noodles, flat, wide, thin, or thick, whatever floats your boat. Completely covered in a red sauce that we can best describe as the love child of umami and pepper.
The sauce consists of soy sauce and gochujang, that famous Korean chili paste, and a generous amount of freshly grated cheddar. And finally, of course, the kimchi; that makes a meal like this a bit healthy too… right?
Healthy or not, these kimchi noodles have a permanent place in our repertoire. We simply love quick meals for busy weekdays, but also for the days when the desire to cook is simply lacking. It can actually be even faster. Just take a look at this list of recipes that you can have on the table within 10(!) minutes.
Making cheesy kimchi noodles
- Cook the noodles according to the instructions on the packaging in a pan with well-salted water.
- Mix the gojuchang with soy sauce, sesame oil, and sugar in a small bowl. Set aside and continue with the kimchi noodles.
- Place a pan on the heat and heat the sesame oil. Add the garlic and spring onion. Fry for 3 minutes.
- Add the drained kimchi and 1 tablespoon of the liquid to the pan and fry for 1 minute. Then add the sauce to the pan and stir well.
- Add a scoop of the noodle water to the sauce and add the grated cheddar. Stir well until the cheese has melted.
- Drain the noodles and add them to the sauce. Toss the kimchi noodles well so that everything is coated with the sauce.
- Meanwhile, fry the fried eggs in a separate pan and sprinkle with sesame seeds, if desired.
- Divide the kimchi noodles among the bowls. Sprinkle with sesame seeds and extra spring onion, and serve with a fried egg.
