A Podlasie delicacy full of flavor. A traditional dish
Potato dumplings are a snack straight from the magical Podlasie region. Their appearance is reminiscent of small pastries, and they're incredibly simple to prepare.
Ingredients · Servings 3-4 people
- 500 g potatoes,
- wheat flour,
- frying oil
- mushrooms (fresh, dried, champignons),
- onion,
- salt and pepper,
- bay leaf.
Method · 1 h
- Boil the potatoes until soft, drain, mash thoroughly or put them through a food processor.
- Once the mixture is smooth, gradually add flour by feel. The amount depends on the moisture content of the potatoes. A soft, easy-to-roll dough should form.
- Finely chop the mushrooms and sauté them – if using dried ones, they need to be soaked a bit first. In a separate pan, sauté the onion until translucent, then combine it with the mushrooms and season with salt and pepper, adding a bay leaf.
- Roll out the dough into a rectangle, spread the cooled filling evenly over it. Roll it up and cut it crosswise into slices. Fry in hot oil on both sides.
