All birthday cakes for children

  • For the sponge cake
  • 6 Egg(s)
  • 250g Flour
  • 125 g Butter
  • 125 g Sucre
  • 1 Sachet Vanilla Sugar
  • 1 Sachet Baking Powder
  • For the pastry cream
  • 4 Egg(s)
  • 1 liter of milk
  • 100 g Sucre
  • 100 g cornstarch
  • 1 Sachet Vanilla Sugar
  • For the Chantilly cream
  • 40 cl Liquid fresh cream
  • 1 Sachet Vanilla Sugar
  • 50g Icing sugar
  • Montage
  • 500g Strawberries
  • 2 tablespoons of sugar
  • Multicolored decorative bead(s)

  1. Preheat the oven to 180°C (gas mark 6).
  2. Prepare the sponge cake. Beat the eggs with the sugar and vanilla sugar until the mixture is pale and creamy. Add the melted butter and stir. Add the flour and baking powder. Grease your cake tin (round, rectangular, heart-shaped... the choice is yours!) and pour in the batter. Bake for about 30 minutes.
  3. Prepare the pastry cream. Bring the milk, sugar, and vanilla sugar to a boil. In a bowl, whisk the eggs until pale and creamy. Add the cornstarch and stir. Once the milk has boiled, gradually pour it into the egg mixture. Return to low heat, stirring constantly, until the mixture thickens.
  4. Prepare the whipped cream. First, place the bowl and whisk in the freezer to help the cream whip up. Whip the heavy cream with a mixer. Once it's thick, add the powdered sugar and vanilla sugar.
  5. Prepare the strawberry puree. Crush the strawberries with a fork (strawberries put through a blender will be too liquid), then add the sugar.
  6. Now for assembly. Cut the sponge cake in half, then spread half of the pastry cream on the bottom layer. Cover with strawberry puree, then spread the remaining pastry cream on top. Place the top layer of cake on top. Finally, cover your cake with whipped cream and sprinkle with colored decorative pearls.
