Pancakes with sour (sour) kefir

Prepare all the ingredients for making pancakes with sour (sour) kefir.

In a deep bowl, combine warm kefir, sugar, egg, and vegetable oil. You can adjust the amount of sugar to your taste, but don't add too much, otherwise the pancakes will burn quickly and be difficult to flip.

Whisk the resulting mixture until smooth. If you like, you can add a little vanilla sugar (1 teaspoon or a pinch of vanilla extract) – it will give the baked goods a pleasant aroma.

Add sifted wheat flour with baking powder.

Mix again. The pancake batter shouldn't be too thick, but it should be perfectly smooth. If the flour lumps don't break up easily, use a mixer or immersion blender.

Pour a portion of the batter into a preheated frying pan, lightly oiled, and spread it over the entire bottom, forming a round shape. If the pan is well-heated, air bubbles will immediately begin to pop on the surface of the pancake, creating a perforated texture.

Fry the pancakes over medium heat for 1-1.5 minutes on each side until golden brown. Transfer the finished pancakes to a flat plate. No need to grease the pan before frying subsequent pancakes.

Pancakes made with sour (sour) kefir are delicious. Serve them warm with honey, sour cream, or condensed milk.
