The secrets to a perfect moussaka

Moussaka is one of the most beloved dishes of Greek cuisine, which evokes memories of family dinners. If you want to achieve a moussaka that is light, delicious and with a perfect texture, there are a few little secrets that really make the difference.

How do I avoid too much oil in eggplants?

The traditional flavor of moussaka is largely due to the fried eggplants.

  • To prevent them from absorbing too much oil, leave the cut slices for 1-2 hours in a bowl of salted water.
  • Then drain them very well, pat dry with paper towels. Fry them in well-heated oil until they turn a light golden color.
  • After frying, place them on absorbent paper or in a colander. If you put a light weight on top, the excess oil will be removed even more.

Alternatively, we bake them after brushing them with oil, in a baking pan, until they are lightly browned & soft, as I show you in the video below.

How do you make moussaka lighter?

If you prefer a lighter version, you can bake the eggplants, potatoes, and other vegetables instead of frying them. This significantly reduces the fat without losing flavor.

Can I freeze eggplants?

Sure. If you have time, fry the eggplants, let them drain well, and place them in a container with non-stick paper between the layers.

They keep in the freezer for several months and thaw quickly when you need them.

Can I add more vegetables?

Of course. Zucchini or peppers can add extra flavor and color. However, eggplant should remain the main vegetable, as its combination with minced meat and béchamel is what characterizes authentic moussaka.

How do I achieve a golden and crispy crust?

For a beautiful, crispy surface, sprinkle the béchamel sauce before baking with some breadcrumbs mixed with kefalotyri or parmesan.

During baking, a wonderful golden crust will be created that makes the moussaka even more delicious.

How can I avoid too much liquid in the pan?

If you notice that liquid has collected in the pan, remove a piece while the moussaka is still warm and place a thick slice of stale bread in its place.

The bread will absorb the excess liquid, while helping the remaining pieces maintain their shape when serving.

How is it served correctly?

Let the moussaka rest for at least 45 minutes after baking.

If you cut it while it's still hot, the pieces will fall apart. The ideal serving temperature is when it's warm but not hot, or even at room temperature if you're going to eat it the same day. This will keep the layers together and make cutting much easier.
