Recipe for refreshing and light Andalusian gazpacho

(Optional: leave or remove the cucumber peel; the only difference is the final color of the gazpacho, from lighter to darker)

Ingredients · Servings 5
  • 1kg of vine tomatoes
  • 1 large cucumber
  • 1/3 of a green bell pepper
  • 200ml water
  • 1 she
  • 2 tbsp of olive oil
  • salt to taste
  • vinegar to taste
Method · 20 min
  1. Wash and chop the tomatoes, cucumber, and bell pepper. (You can optionally peel or leave the cucumber on; the only difference is the final color of the gazpacho, which will go from lighter to darker.)
  2. Peel the garlic, cut it in half, and remove the germ with the tip of a knife. This will prevent the garlic from repeating on you.
  3. Place the bell pepper, cucumber, and half the tomatoes in a food processor or blender. Blend until smooth.
  4. Add the remaining tomatoes and blend again.
  5. Add the garlic, olive oil, salt, vinegar, and half the water. Whisk again.
  6. We pass the gazpacho through a sieve to remove the seeds and any remaining bits of tomato skin.
  7. Finally, add the remaining water, adjust the salt or vinegar to taste, mix well, and cover with plastic wrap to refrigerate for 1 hour. Then, simply serve it in a bowl or glass (to eat with a spoon or drink). Optionally, add chopped cucumber and tomato on top and a drizzle of olive oil. And that's it! Enjoy!:)
