Grilled flank steak with chimichurri and roasted new potatoes

Ingredients · Servings 4
  • flank cut
  • olive oil
  • new potatoes
  • salt
  • fresh basil
  • garlic
  • fresh parsley
  • chili flakes
  • lemon(s)
  • black pepper
  • food & baking butter
Method · 45 min
  1. Preheat the oven to 200 degrees. Take out the meat so that it is room temperature.
  2. Rinse the potatoes. Mix the potatoes with 1 tbsp oil and salt to taste on a baking sheet. Roast in the oven for about 40 minutes.
  3. Mix together the basil, parsley, peeled garlic clove, 3 tablespoons olive oil, chili flakes, grated lemon zest and lemon juice until smooth. Season with salt and pepper and set aside.
  4. Season the meat with salt and pepper all over. Fry the meat in a hot grill pan/frying pan in 1 tbsp olive oil and 2 tbsp butter for about 2-3 minutes per side. Then lower the heat and let it cook over medium heat. When the flank steak is about 56-58 degrees in the middle, it is done.
  5. Wrap the flank steak in aluminum foil and let it rest for 5-10 minutes. You can also grill the flank steak on the outdoor grill.
  6. Cut the meat across the grain. Top the meat with chimichurri.
  7. Place the roasted new potatoes in a bowl.
  8. Serve the flank steak with chimichurri, roasted new potatoes and preferably a salad on the side.
