Brunch hit for autumn: Simple mushroom pancake tower for guests

You've invited guests over for a cozy autumn brunch? Then don't just put out rolls and spreads. This savory pancake tower with mushrooms will impress your guests!

Ingredients · Servings 4 people
  • 3 Owner (Gr. M)
  • 270 g flour
  • 300 ml milk
  • Salt
  • 150 g smoked, streaky bacon
  • 3 spring onions
  • 500g Mushrooms
  • 1 red onion
  • 2 EL Kill
  • 4 TL Butter
  • Pfeffer
  • 1/2 bunch of parsley
  • 400g Fresh cream
Method · 45 min
  1. Separate the eggs. Mix together the flour, milk, and egg yolks. Beat the egg whites with a pinch of salt until stiff peaks form, then fold them into the flour mixture. Let the batter rest for about 15 minutes.
  2. Meanwhile, cut the bacon into pieces. Trim and wash the spring onions, then slice them into rings. Clean the mushrooms, then halve or quarter them.
  3. Heat 1 tablespoon of oil in a 25 cm diameter frying pan. Fry 125 g of bacon in it for about 3 minutes, turning occasionally. Remove the bacon from the pan and let it cool slightly. Mix the fried bacon and spring onions into the pancake batter.
  4. Add 1 teaspoon of butter to the pan with the bacon fat and reheat. Spread 1/4 of the batter into the pan. Cook the pancakes until golden brown on both sides. Cook 3 more pancakes, one after the other, in 1 teaspoon of butter each and keep warm.
  5. Peel and finely chop the onion. Heat 1 tablespoon of oil in a pan. Sauté the onion for 3-4 minutes, stirring occasionally. Add 25g of bacon and render the fat for about 2 minutes. Add the mushrooms and sear for about 4 minutes.
  6. Season with salt and pepper. Remove from the heat and transfer to a bowl. Wash the parsley, shake dry, pluck the leaves, chop finely, and add to the mushroom mixture. Set aside 1–2 tablespoons of the mushroom mixture for garnish; mix the remaining mushroom mixture with crème fraîche and season again with salt and pepper if necessary.
  7. Place a pancake on a plate. Spread 1/3 of the mushroom cream on it. Place another pancake on top and spread with another 1/3 of the mushroom cream. Repeat this process once more and finish with a pancake.
  8. Garnish with the reserved mushroom mixture.

Instead of arranging the mushroom pancakes individually on plates, they are stacked on top of each other with crème fraîche, savory bacon, and spring onions. This not only tastes delicious but also looks fantastic on the brunch table.

If you would like to prepare the mushroom pancake tower vegetarian, you can easily replace the bacon with smoked tofu.
